יין מבעבע הראשון בהיסטוריה שנעשה מענבי גב ההר הישראלי ובשיטה המסורתית, מטרואר דומה עד זהה לחבל שמפיין בצרפת מקור השמפניה. ענבי השרדונה ליין פסגות בלאן דה בלאן נבצרו במועד הבשלה אופטימלי בבציר ידני לילי מהחלקות המשובחות ביותר של כרמי היקב בהרי ירושלים. תהליך התסיסה החל במיכלי נירוסטה, שם התיישן במשך 6 חודשים. היין עבר תסיסה משנית בבקבוק, שם התיישן במשך 6 שנים על גבי השמרים ורק לאחר מכן עבר את שלב הפיקוק (disgorging). זהו יין מבעבע מבושם בעל מורכבות מסוגננת מרעננת, אלגנטית ומלטפת המציג ניחוחות עדינים אך עשירים של תפוחים, מלון, הדרים, מאפים בצקיים וארומות מענגות. היין יהווה אפריטיף מעולה וישתלב נהדר עם גבינות ודגים ואף מהנה לשתייה בפני עצמו
